N-甲酰甲硫氨酸（英語(yǔ)：N-Formylmethionine，簡(jiǎn)寫(xiě)為fMet）是一種存在于細(xì)菌及相關(guān)的真核生物細(xì)胞器中的蛋白氨基酸。它是氨基酸甲硫氨酸的衍生物，其中一個(gè)甲酸基被加到原甲硫氨酸的氨基上。他專門用于蛋白質(zhì)合成的起始階段，之后它可被移除。 N-甲酰甲硫氨酸在細(xì)菌、線粒體和葉綠體的蛋白質(zhì)生物合成中起到至關(guān)重要的角色。但它并不用于真核生物胞質(zhì)溶膠中的蛋白質(zhì)生物合成，真核細(xì)胞的細(xì)胞溶質(zhì)中只有核基因被翻譯。它亦不被用于古菌中。在人體中，N-甲酰甲硫氨酸會(huì)被免疫系統(tǒng)識(shí)別為外源性物質(zhì)并刺激機(jī)體對(duì)抗?jié)撛诟腥尽?/span>
